Real Food: Hamburger Casserole

Hamburger Casserole: Meaty, cheesy, ooey gooey, goodness in real food fashion.  This easy to make one dish meal will satisfy even the pickiest men in your life.  Hamburger casserole is like a cheeseburger in every bite.  YUMMY!!

Ingredients: will make 2 large casserole dishes
*4lbs Ground meat (browned  with the seasonings, celery, onion, and sweet peppers and drained)
*10-12 Potatoes (peeled and cut up)
*2 stalks of celery
*1 whole Onion
*2 cans or 1 bag frozen whole kernel corn
*1 large Sweet Peppers (we prefer red, orange or yellow, they are less hard on the belly than green)
*Salt, Pepper, Garlic, Cayenne,  Italian seasoning, to taste.
* 1 stick Real Butter
* 1/2 block Cream Cheese, 1 cup Plain Greek Yogurt or sour cream.
*Shredded mozzarella and cheddar cheese (to your liking)
* 1 can evaporated milk or 12 ounces of Raw whole milk
*Crushed Tortilla chips or crumbled bread (your choice for topping)

Directions:

Preheat oven to 400
Peel potatoes and cut up (I like to do slices then cut the slices in half because they cook faster)
Brown ground beef (turkey, chicken, pork, ) with onions, sweet peppers, and seasonings then  drain
Add corn, cream cheese, & yogurt or sour cream stir and blend well, let simmer on low while you prepare the pan and potatoes
Place each baking dish in oven with 1/2 stick of butter and let butter melt
Add potatoes to melted butter in dish, stir around to coat potatoes and season potatoes with salt, pepper, garlic, italian seasoning to taste. (I have also used homemade powdered ranch dressing to coat the potatoes)
Layer hamburger mixture on top of potatoes
Layer shredded cheese on top of hamburger mixture
Pour 6 ounces of milk or evaporated milk on each casserole
Top with crushed tortilla chips
Cover with aluminum foil
Place in oven and bake covered until potatoes are done. (Usually about 45 minutes)
Uncover and brown the top
Let stand 5 to 10 minutes
Serve with salad, greens, fruit, etc..

****TIP:  I place an air bake or stone cookie sheet under my glass baking dishes to keep the bottom from burning.

  2. This sounds really good! My son and husband miss hamburger helper quite a bit after we switched to real foods. I love the options you have included. I’ll use yogurt or yogurt cheese instead of cream cheese. And now that Tostidos makes Organic and GMO free Tortillia chips, I won’t feel quilty adding them on top. I Pinned this!

      Yes, I actually started making the hamburger mix first to mix with noodles as a hamburger helper replacement years ago when I first started trying to make healthier decisions. I haven’t seen the organic tostidos I’m definitely going to look for those. Thanks for stopping by.
